1. Saucisson Sec is a French-style Salami made with garlic, nutmeg, and white pepper. Meat from our 2020 hog harvest was traditionally 'fermented' (cured) by a European-based artisan processor (in NY). The result is truly decadent.


2. The Italian Truffle recipe is a classic salami laced with real Black Truffles!


Our heritage-breed, "Old Spot" hogs were raised on pasture and got to live their best life. We fed them organic, soy-free grains, farm veggie scraps, and whey from our cheesemaking. They truly lived their best life.
