Liontooth

For this Goat cheese we played with the French name for the puffy, white Danedlion flower. We ripen this cheese with the puffy white mold after dusting with ash which is a style shared with some French goat cheeses. This soft-ripened round is similar in texture and flavor to a Camembert, with note of lemon-pepper added by the goat milk.
